Similar to a Tom Collins, a John Collins is made with bourbon. It’s an interesting summer drink, similar to one of my favorites, the Moscow Mule.

  • 1.5 oz of Bourbon (I used Jim Beam)
  • 1 oz of Lemon Juice (fresh squeezed or the bottle type)
  • Pour into a glass over ice.
  • Stir.
  • Pour into a highball glass, over ice.
  • Add an ounce or so of simple syrup. To taste, really
  • Fill with club soda to the brim
  • Garnish with circle of lime and a plastic monkey

Serve.
